Banana Bread

I saw your photo before this post scrolling down, and I was like “Banana Bread!!” …then I was like…hang on, I dont want to reblog, case its meatloaf or something (having never tried or seen a meatloaf, but it looked loafish)

Banana Bread is the first ‘grown up’ recipe I made as far as baking goes. To mine, I add walnuts, and its heavenly.

It was Nigellas ‘aromatic fug’ that drew me in!

Yours looks lovely, and I am inspired to make some now. Just yesterday Ell was like, “You havent baked in ages”….and I was like…”Thats because I like not getting fat”….

But I will have to give in now….besides its wintry and stuff. Comfort Food Hello!

I decide to make some Banana Bread tonite as my bananas were all brown and smushy.  I used the recipe below and subbed the butter with FF sour cream.  I will let you know how it goes.

Banana Bread Recipe

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
